They will, and a Thunderbolt 5 laptop simply negotiates down to whatever the hub supports. What Thunderbolt does not do is speed the hub up. A 5Gbps dock stays at 5Gbps regardless of what it is plugged into, so buying a faster laptop to improve a slow dock is money spent in the wrong direction.

Do I need to buy a separate power adapter?

Picking the Hub That Matches Your Laptop

Everything in this category runs backwards from how people shop for it. Buyers start with the hub and work outward to the desk, when the only sensible starting point is the laptop, since it sets the ceiling that no accessory can raise. Two minutes spent finding out which DisplayPort version your machine outputs, and whether it runs macOS, eliminates roughly half of what is on sale and saves a return. The most common failure I see is somebody buying a capable hub for a laptop that was never going to feed it properly, then blaming the hub, then buying a second one that fails in exactly the same way.

My own bias, for what it is worth, runs toward buying less hub than the listings encourage. Most of what inflates these products past the basics is charging capacity and port count that a single laptop with a keyboard, a mouse, and two screens will never touch. Work out the resolution and refresh rate you actually need on both monitors, add whatever charging your machine genuinely draws, and stop there.
