Chipotle has engaged an avocado peeling robot to speed up the preparation of guacamole
Restaurant chain Chipotle has partnered with robotics company Vebu to test the Autocado robot, which slices, core and peels avocados for use in guacamole.
Here's What We Know
Kitchen staff simply fill the robot with ripe avocados weighing up to 11kg and select a size. Once finished, they collect the fruit into a bowl, add the rest of the ingredients and proceed to make the puree.
As the Autocado improves, Chipotle expects to cut guacamole preparation time in half. This will ensure a steady supply of the dish and relieve employees of some of the time-consuming work.
The restaurant also believes the robot can reduce food waste through more efficient processing.
Autocado is currently only operating at a test centre in Irvine, California. According to Chipotle representatives, this is the beginning of a "long-term collaboration" with Vebu.
